Medieval Times Tomato Bisque Soup {+ Discount!}

Soup’s on in the Medieval Times Kingdom!  Enjoy a castle favorite, the tomato bisque, and help Dallas LIFE with food donations

Winter's chill is taking hold of the kingdom this January and February, and what better way to warm up than with a hot, delicious bowl of soup! Known for their famous tomato bisque, Medieval Times is partnering with non-profit Dallas LIFE to help those in need create their own healthy soups by tackling hunger in North Texas with a food drive and by releasing the bisque recipe for all to make.


To donate, bring any non-perishable food item to the Dallas castle and receive 45% off adult admission for a Thursday, Sunday or the 2pm Saturday show through February 12th.  Suggested food items include the makings for soups including tomato sauce, beans or peas, broths or stocks and canned vegetables. 

The history of soup is as old as the history of cooking.  The act of combining various ingredients in a large pot to create a nutritious, filling, easily digested, simple to make/serve food was inevitable. This made it the perfect choice for both sedentary and travelling cultures, rich and poor, healthy people and invalids. Soup (and stews, pottages, porridges, gruels, etc.) evolved as dictated by local ingredients and tastes. There was no tableware, so soup was drunk right out of the bowl, as was any type of stew.

Soups are a great option nutritionally, they provide us with lots of important nutrients including vitamins and minerals for relatively few calories. Soup can be a simple addition to any meal and a great way to make sure that you and your family get the essential servings of whole grains, vegetables and protein in one bowl.

“There is no secret to creating an amazing soup,” said Frank Dameron, Director of Food Services at Medieval Times. “It’s all about the ingredients. The best herbs and fresh produce will help keep even the coldest Dallas/Fort Worth winter days at bay.” 

MEDIEVAL TIMES TOMATO BISQUE  (home version)

2 tbls.  canola oil
2 ea.    medium carrots, peeled
1 ea.    celery stalk, cleaned and trimmed
½ ea.    medium onion, peeled
1 tsp.   garlic, minced
2 ea.    6 oz. cans tomato paste
1 ea.    15 1/2 oz can tomato puree
5 cups  water
1 tsp.   paprika
3 tbls.  sugar
2 tsp.   salt
¼ tsp.   fresh ground pepper
Pinch   Italian seasoning
½ ea.    lemon, for juice

  1. Cut the carrots, celery and onion into small pieces about ½ inches. Place the carrots, onions and celery into a food processor fitted with the knife blade and pulse until they are finely minced, almost pureed.
  2. Heat the canola oil in a 5 – 6 quart stainless steel sauce pan or pot. Add the finely minced carrots, onions and celery and cook until vegetables are soft but not browned, about 5 to 7 minutes.
  3. Add the minced garlic and continue to cook for another 2 minutes.
  4. Add the tomato paste and stir into the vegetables to combine well and cook for another 2 minutes.
  5. Add the tomato puree, water, paprika sugar, salt, ground pepper, Italian Seasoning and juice from ½ lemon.
  6. Bring soup to a boil while stirring frequently. Once soup comes to a boil, reduce heat to a simmer and continue to simmer for 20 minutes, while stirring frequently to prevent soup from scorching.
  7. When soup is finished cooking, remove from heat, taste and adjust seasoning if necessary. Serve immediately.

Happy 7th Birthday, Rachel!

How time flies.  

Here is my baby girl just 4 days old.  It seems like just yesterday.


Today she turns 7 years old!  She has been talking about this birthday for the last 6 months and she is very excited that the day finally arrived!


She had to start the day with presents from us and other family members.

She loves the Goldie Blox building toys.  They encourage her to build fun projects but she can also use the pieces to make her own creations.  This one has a project for making a zoetrope movie machine!


She loves animals but I'm allergic to everything so there are no pets in our home.  But we found these cute little battery operated mice that run through a track.  Stuart helped her put their track and home together.  They even have a little mouse wheel in the house to run on!  They are so cute!


Stuart took a vacation day from work to help celebrate her birthday.  She put on the fanciest dress in her closet and we went to Sara's Donuts for breakfast.  When Sara complimented her on her dress, Rachel informed her that it was her birthday.  Sara gave her two extra special donuts to celebrate!

I love this sweet beautiful girl!


She wanted me to get a picture of her making the number 7!

Grandmother Chance and I both wanted to get Rachel some things from the American Girl doll store.  But when Rachel went through the catalog and circled her favorite things, she came up with just 161 circles.  We asked her to narrow it down and it was still a long list.  So I decided to take her to the American Girl store so she could see the items in person.  Besides, I thought she might have more fun on a mini shopping spree where she got to pick out her gifts herself.

I scoured the internet to try to find if there were ways to save when shopping at American Girl.  I found two great tips!

1.  Costco sells American Girl gift certificates.  You get $100 of gift cards for just $79!  Fortunately we have a Costco membership!

2.  Some American Girl catalogs come with a 20% off coupon and special coupon code on the back.  We checked all of our catalogs but didn't find a coupon or code.  But I posted on my Facebook page to see if anyone had a coupon that they weren't going to use and a friend offered one to me!  The coupon is good for 20% off the total purchase, not just one item like I expected!


I determined that I would be able to combine both deals for a savings of 40%!  We were going to have fun shopping!


This little girl couldn't contain her excitement!


We went looked at every single doll, outfit, and accessory in the store.  We were there several hours but we both had fun playing with the dolls.  What a wonderful store!


I eventually had to drag her out but she ended up with two dolls and some fun items to go with the dolls.  


Tonight we had a party at the theater for the cast of My Son Pinocchio Jr. so she sort of got a party on her birthday.  

She said it was the best birthday ever!

Having Fun with Math at the Perot Museum of Nature and Science {+ Giveaway!}

We love the Perot Museum of Nature and Science.  The exhibits are amazing and the kids love how each one is interactive.  We can easily spend all day there and not see everything.  Today we spent most of our time in the 2theXtreme: MathAlive! exhibit.
 
Nicholas designed a skateboard.  His goal was to optimize it to perform the best tricks.  He adjusted the board shape, the length of the board, the size of the wheels, and the tail length.  Then he got to run a test to see how it would perform.  Who knew skateboarding involved so much math?!
 

Rachel loved the climbing wall.  She could have measured her height and arm span but today she just wanted to climb.


I think the kids' favorite part of the exhibit was the Boardercross snowboarding experience.  They stood on snowboards that pivot to help them maneuver around curves on the track.  But they also had to keep in mind that as they changed the angle of the board they would lose speed and might not win the race.  All three of us had a blast on this.  We played it over, and over, and over again!


Nicholas learned about math and architecture as he worked to choose the elements he would need to build a stable skyscraper.


Oh I loved the Shadow Play exhibit.  The wall looked like it was just covered in numbers randomly scattered around...until you turned on the light that shone from the side.  How cool!


Ok, another bit hit was the 360 degree photo shoot experience.  The kids made a single pose and then see their picture as taken by 20 cameras at the same time that were stationed all around the photo booth.  It made for a really neat 360 slide show!


We learned about nature and numbers by playing with the Fibonacci Series.  This always makes math come to life for me!


Nicholas enjoyed the Mix It Up station where he learned how music notes use fractions of a beat in half notes, quarter notes, eighth notes, and sixteenth notes.  He got to press buttons to hear the differences in the beats.  Yep, music and fractions!  So cool!


We loved seeing the On Target exhibit that even talked about Robonaut who we just learned about on our recent trip to NASA.  She got to work on an interactive task of moving a robotic arm to capture a target floating in space.

Free Ice Cream Cone (and a silly girl)

Earlier today Rachel found my box of party supplies that I keep stored in her closet.  She found this paper pirate hat from a previous pirate party for Nicholas.  She has worn it ALL. DAY. LONG.  She even insisted on wearing it in dance class.  She's just the cutest pirate ballerina I've ever seen!


After dinner tonight we headed out for some ice cream.  We go to Ben and Jerry's for ice cream every year on this day.


And when we do there is always a line across the courtyard!


Why might you ask?  Because April 8th is the anniversary date for the first Ben and Jerry's ice cream shop.  Since 1979, when they celebrated their one year anniversary, April 8th has been known as Ben and Jerry's customer appreciation day and they give everyone a FREE ice cream cone!  Woo hoo!


We even got to see their cute cow mascot in person!


Rachel picked Mint Chocolate ice cream and Nicholas got Strawberry.  


Of course, I picked Chunky Monkey which is the best banana ice cream around complete with fudge chunks and walnuts!


Daddy got Triple Caramel Chunk which is caramel ice cream with a swirl of caramel and fudge covered caramel chunks.  Wow!  Doesn't that sound AMAZING!


After our indulgent dessert we stopped by Party City on the way home.  Nicholas needed some balloons because tomorrow he is going to be making balloon animals at the homeschool craft show.  As we were leaving, Rachel ran up to this picture in the window and squealed, "Look she's just like me!"  She was referring to the ribbon pin that the girl in the picture was wearing.  As I mentioned earlier, Rachel dug out some of my party supplies and found a blue ribbon pin which she wore all day.  She asked me to get a picture of her with the giant picture!



Every day is fun and crazy with these kids!
