Cub Scout Day Camp

Today was the first day of Cub Scout camp for Nicholas. They have camp at one of our favorite place, LISDOLA (Lewisville Independent School District Outdoor Learning Area). He'll be at camp from Tuesday - Friday from 10:00 - 4:00 every day. They will do some hiking, archery, shooting BB guns, and have some water fun. Totally cool boy stuff!

Nicholas is very excited and couldn't wait to get his gear together this morning.



Although we've never participated in one of these camps, we've heard that the cub scouts usually have a lot of fun with "swaps" which are little trinkets that can pin to their hats. They are usually coordinated with the theme of the camp. All week long, the boys will meet other cub scouts from other Packs that are at camp too and they all have fun trading these "swaps". This year's camp theme is Space Adventure. I couldn't find any pre-made space things that were small enough to pin to his hat so we made our own out of Perler Beads. Nicholas designed this space shuttle. It was one of my favorites that we made for today.



Here are some others that we made but they are still on the pegboards so you can't get a good feel for how they really look.



We met up at the school down the street. Nicholas was grinning ear to ear!



The boys piled in the leaders' cars and headed out for a full day of fun.



Nicholas couldn't wait to get out there. I felt a little sad. Partly because I would miss my little guy but also because I love LISDOLA and wanted to go out there with the Pack to help out. But Rachel is too young to handle being out in the heat for that long and she's too young for their tot camp for volunteer parents. So for this year, we will just have a week of girl time at home.

Unfortunately, Rachel didn't like this idea at all. As she watched Nicholas leave in someone else car, she started to cry and she fussed all the way home. She said that she wanted Nicholas and didn't want him to leave her.





I tried talking her out of it with all the fun that the two of us would have. She pouted and said she didn't want to play with me. Hmphf!

So I resorted to Plan B and started making pouty face back at her and acting silly. I could see she was starting to soften some around the edges.



Finally, she started making funny faces with me.



And then got excited and wanted to go play with Mommy! Whew!



We picked Nicholas up from camp this afternoon. Rachel, of course, was excited to see her big brother. Nicholas was dirty and sweaty but very happy. He showed off a balloon powered car that he had made that day.



Why did the scouts pick a white t-shirt for boys to wear in the woods all week? How am I supposed to get these stains out each night and have it clean for the next day? This poor shirt will be a mess by the end of the week!

Nicholas was excited to show off some of the swaps that he had traded for. There were lots of alien things including these candies that the boys called Alien Poop. Yum!



He traded all of the space shuttle swaps that we had made so we'll have to make more tonight. And of course, I've got to get some stain remover on that shirt of his.

California Strawberries and a Giveaway

Our family loves strawberries and we could eat them every day. I have to buy at least two pounds at a time because the kids will eat a whole pound between the two of them in one sitting. So I was super excited to get an invitation from my friend Holly of June Cleaver Nirvana to participate in a Dallas blogger reception hosted by the California Strawberry Commission. And it only boosted my excitement more when I learned that it would be at the Milestone Culinary Arts and Viking Cooking School in Dallas.



Look, Honey! This Viking kitchen is still here from the last time I visited the Viking Cooking School. I know you missed getting it for me at Christmas but my birthday is coming up...



There was a full spread of incredible foods all made with fresh strawberries.



We started off with some Strawberry Gazpacho. I've never had a gazpacho. I think I've just been intimidated by such an odd name. But this was delicious and refreshing!



Then we had Strawberry and Taleggio Paninos. Who came up with this idea? I would have never thought to try strawberries on a sandwich but the flavors really worked great together. I could eat these everyday.



Strawberry Caprese Salad



For our main course, we were served Grilled Mahi Mahi Tacos with Strawberry Salsa. Here are the basic tacos.



One of the culinary students helped to prepare these by topping them with the delightful Strawberry Salsa.



Take a look at this salsa! It is so fresh and so delicious. It could really be used in so many ways...or just eaten straight with a spoon!



There were also several choices in alcholic and non-alcholic strawberry drinks.



I tried two different drinks and really loved the Basil Strawberry Mojito. I mean, REALLY loved it! Who would have thought basil and strawberries would taste so great together in a drink?



Of course, you can't skip dessert. We are here about strawberries, ya know! For dessert, we were treated to delicious Strawberry Sliders. These were just heavenly! I wondered how many I could pile on my plate without looking greedy...



We heard about Holly's trip to California where she walked through the strawberry fields and learned about the process involved in getting the strawberries from crop to your table.



We also heard from Dave Grotto, dietitican. He said that only 42% of Americans eat the amount of fruit they should each day. He clarified that fresh vs. frozen is about the same healthwise then he talked about some of the health benefits of strawberries.

Strawberries are high in Vitamin C content which helps repair collagen to keep your skin firm. They are also high in potassium which can prevent hypertension and stroke. He also suggested that adding one cup of strawberries per day can help improve memory.

We even got to participate on a Skype call with a real California strawberry farmer to learn more about the growing process. Carolyn O'Donnell with the California Strawberry Commision also spoke with us. Of course, this was a blogger event so everyone was taking pictures to share on their blogs.



The Strawberry Commission gave me a couple of cookbooks and I'd love the share my favorite recipe with you. This one is from "Strawberry Recipes for Everyday". Keep reading to see how you can win your own copy of this book!

Strawberry Shortcake Sliders
Ingredients
2 cups all-purpose flour
3 tablespoons sugar, divided
1 1/2 tablespoons baking powder
1/2 teaspoon salt
8 tablespoons cold unsalted butter, cut into 1/2 inch pieces
2 1/4 cups heavy cream, divided
6 cups stemmed fresh California strawberries, divided
1 cup simple syrup.
1 teaspoon vanilla extract
Confectioner's sugar
Mint chiffonade

Preparation
Sift flour, 2 tablespoons sugar, baking powder and salt into a bowl. With a fork or pastry cutter, cut in butter to fine particles. Stir in 1 to 1 1/2 cups cream (enough so that dough holds together and is soft but not sticky). On a floured surface, knead dough lightly a few times to form a ball. Pat into a 1/2 inch thick circle. Wrap in plastic wrap; refrigerate at least 15 minutes. Heat oven to 400 degrees. With a 2 inch rouch cutter, cut dough into 12 circles. Place on parchment-lined baking sheet. Bake 15-20 minutes or until golden.

In a saucepan, simmer 4 cups strawberris with simple syrup until jam-like consistency; cool. Slice remaining strawberries. Whip 3/4 cup cream with vanilla and 1 tablespoon sugar until soft peaks form.

To serve, cut shortcakes in half horizontally. Place 3 shortcake bottoms on each of 4 plates. Top with cooked strawberries, whipped cream and sliced strawberries, dividing ingredients evenly. Place tops on shortcakes; dust with confectioner's sugar and sprinkle with mint.

Happy Father's Day to all dads everywhere.

We had a fun day and the kids were very proud to give Daddy their gift. They worked hard on it.



Amazingly, they were really good models to work with and did just what I asked them to.

Texas Nature Challenge: Trinity River Audubon Center

Today we completed the Texas Nature Challenge for the Trinity River Audubon Center in Dallas.



It's quite a drive from our neck of the burbs but well worth it for a fun day in the great outdoors. We came here last year for their Nature Challenge as well.



This is the back side of the nature center. Why do you think they have all of these little windows? We'll have to find out later.



My kids remembered the boardwalk over the water from when we were here last year. Bridges are always a cool thing for kids.



The Trinity River Audubon Center was once an illegal landfill covered with 1.5 million tons of trash. The City of Dallas spent three years cleaning the site and burying the trash in capped-landfills on the property which now just appear as nice hills on the property. Audubon is working to restore this land to the Blackland Prairie, Great Trinity Forest, and Trinity River wetland systems that it once was.

Our mission today is to help with this restoration process. We took the trail down to the Trinity River. Along the way, we were to look for and collect 20 pieces of trash then once at the river we were to observe the trash and little collecting on the opposite bank of the river from us. This spot at the end of the trail was perfect for viewing the river.



We didn't see much trash on the other banks of the river but there were a few pieces here and there.



We got to the TRAC around the time of the big NBA Dallas Mavericks Welcome Home celebration in Dallas this morning. The Mavs just won the NBA finals championship and there was a big parade and party downtown to welcome them home. We could have gone to the big party but I thought quiet time in the woods with the kids was better than loud, rowdy, and jam-packed people partying like crazy. But the loud party crowd didn't want to leave us out of the celebration. As we were looking at trash along the river, Nicholas noticed this blue Mavs basketball floating down the Trinity River!



We sat at the picnic tables and decided to explore the backpack that we had borrowed from the nature center. It was full of field guides and maps, a notepad and colored pencils, a magnifying bug box, and a compass.



The kids sat and drew a picture of the river and the trash he had seen.



Rachel saw this purple thing near her on the picnic table and asked, "What's that?". It was purple bird poop! Well, you've got to learn about it somehow.



Nicholas wore his new adventurer hat and was doing a great job of leading our hike.



We used the compass to learn which direction we needed to head to get back to the nature center.



Just outside the nature center, Nicholas found this little moth sitting on the boardwalk. It was kind of funny because last year we found a cicada sitting in that very spot!



Every third Thursday of the month, TRAC offers free admission to the property. Today was the third Thursday so inside the nature center, there were some special animal encounters and girl scout presentations that aren't usually here.



Nicholas comleted a pledge to do his best to Reduce, Reuse, and Recycle his trash properly. He's always so good about this because we've taught him about the 3 R's from a very early age.



There were several girl scout presentations. They offered bookmarks recycled from cardboard packaging such as cereal boxes. At each presentation, the child could get a stamp on their bookmark and then get a prize at the end. They both got excited about filling up their bookmark with stamps.



At our first presentation, we learned about the habitat of the Trinity River and how to protect it.



The kids colored and cut-out their own red-ear slider turtle bookmarks.



Rachel has been doing well with cutting and she was very proud to be able to use the scissors to cut out her turtle.



Nicholas did a great job with coloring his turtle with realistic markings. He loves red-eared sliders!



Next we learned about butterflies and other bugs. Here the kids colored coffee filters and then attached them to clothespins to make their own butterfly magnets.



Rachel was very proud of hers and flew it all around the nature center.



Next we learned about mammals that live on the river and the kids learned how to identify different kinds of animal tracks. Then they completed some activities in a take home booklet they were given.



Rachel just wanted to color everything in her booklet pink.



The kids filled up their bookmarks with stamps and each won these pencils that are made from recycled blue jeans! Cool! They also got passes for free admission in the future.



We took some time to explore the nature center and look through all those neat little windows that we saw earlier from the outside.



I love this little sitting area for kids. How fun to sit in this little cubby hole and read a book about nature.



Rachel was obsessed with working this puzzle and spent a lot of time in the little cubby.



There are some great hands-on exhibits and things to look at throughout the nature center.



Rachel found some "touch me" drawers. Here she is learning about different kinds of animal fur.



There are several cool displays like this where you can look through a scope to see an animal then press a button to hear the sound it makes.



Rachel liked this little area with touchable items set up under magnifying glass.



She crawled into the little cubby area and made sure to study each and every item there.



There was a fun little area just outside the nature center where a lot of kids were playing so we had to check it out.



I bought the kids each a little souvenir in the gift shop. They are these little plastic bird whistles that I remember having when I was a kid. You put water in and blow into the whistle and it really sounds like a bird call. My kids weren't excited about them until I showed them how it works. Then they wouldn't stop blowing them. I'm afraid we may not have been good stewards of Reducing our water use today. They filled those whistles over and over again.
